I know the Fellowship of the Ring and the Company of Thorin Oakenshield and their journey to the mountain and Mordor and whatnot, and I am somewhat familiar with Morgoth and Sauron's wars against the rest of Middle-Earth, but you have to admit that there are A LOT of characters, events, and places for a casual fan like me to memorize. Since I'm planning to create a fan-sequel to Tolkien's works, I need all the help I can get. With the information I have, I can plot the points that will make this sequel something to waste your time reading

It depends on what story you want to tell. Who are the characters you want to concentrate on, and how long after the War of the Ring will your story take place? That would probably narrow down your search.
The story takes place about a hundred years (give or take) after the War of the Ring. I was planning on it focusing in the East with a cult established with the remnants of Sauron's forces (Easterlings, Haradrim, Orcs) with the mission of bringing back his master Morgoth from the void. I was planning on the Blue Wizards being a part of the story as they've only been mentioned before. Another character is a half-orc sorcerer that wants to stop the cult mainly because he wants to save his mother's life, so he goes West to recruit one of if not both the wizards. I was also thinking of adding another character who could be either an elf or a man that could journey with the sorcerer and the wizard back East to see if his claims are true and stop them if they are. I was thinking that the sorcerer and the elf or man could make that prophecy come true where Morgoth gets slain by the two beings with the two swords. I forget the name of it and the swords which is why I need the help
The return of Morgoth will result in Dagor Dagorath, which is Middle-earth's version of the Apocalypse. Morgoth will be slain by either Eonwe or Turin, depending on the version you prefer. Turin wielded the sword Gurthang, but that sword broke when Turin died. It is said to have been buried with Turin, but whether it still exists is unknown.
Your story is similar to Tolkien's unfinished work The New Shadow, so you can use the summary to help you get ideas. Note that in your setting, Aragorn/Elessar would still be King of Arnor and Gondor, although his reign would end in a few years. Most of Sauron's forces have been destroyed, but a few remnants could very well have founded a secret cult.
Would it be possible for the shards of Gurthang to be retrieved, say by one of the Blue Wizards? Or would it just be better to look for a different sword or to get some different ones?
If you know where Gurthang is buried, ie on Tol Morwen, you may try to look for it. But keep in mind it has been over 6000 years that it was buried. It probably corroded a long time ago, as well as the stone marker denoting the grave. Even if it has somehow survived, is there anyone left in Middle-earth with the skill to reforge it with the same power?
Most likely the wizards or the sorcerer. Or perhaps a sword of Eol's could be used instead. I know he had two
Eol's other sword was stolen by Maeglin, and he probably had it during the Fall of Gondolin. Maeglin was thrown down from the walls of the city, so his sword likely met the same fate. Also, Beleriand sank under the sea after the First Age, so it's unlikely that too many artifacts from that time survived. However, there are exceptions such as Orcrist and Glamdring.
I'll take my chances and say that it survived. It's better for the sorcerer to have that sword than whatever the soldiers of the East have in their possession (especially ones that are cast out by the rest of their nation)
