I will nominate the Brothers Hildebrandt. Their LOTR artwork is probably why orcs in 1st Edition AD&D had snouts.

Angus McBride did a lot of artwork for the Middle Earth Role Playing game.
Jon Hodgson has established himself as an artist who has captured the feel of Wilderland for The One Ring Roleplaying Game.
Frank Frazetta's LOTR art is popular, although some pieces are just a little risque.
Frazetta's illustrations of Eowyn do skew a bit towards Red Sonja.
