They weren't named as far as I know. All that is said about them is that they were in different rooms being busy doing things. What they were busy doing was never stated. They may have been preparing for the journey.
We can guess that the three dwarves might have been some of the surviving companions of Thorin Oakenshield or their close kin. We do know that they could not be Balin, Oin or Ori; and Bombur seems pretty unlikely (he would have been too fat by then).
Dwalin would have been pretty old (about 229?) to be doing much traveling, but he lived for more than another century, so maybe? Any of the dwarves born after T.A. 2802 would have been born and raised in the Blue Mountains and might have had better reasons than most to travel back and forth between there and Erebor. One of the dwarves might even have been young Gimli or some cousin of his!
I think if any of the dwarves from Thorin and Company were in that retinue, they would have been named. It's possible they were hired to be Bilbo's guides and bodyguards. He was 111 years old, after all. Or maybe they were planning to travel from the Blue Mountains to Dale anyway, and Bilbo decided he wanted a few travelling companions.
It does seem more likely that former companions of Thorin would have been identified by Tolkien in that chapter. They might still have been kinfolk of the dwarves of the company, or at least trusted friends.
