After Bilbo gave up the ring he started ageing again and he was only 111 when he gave up the ring and he started ageing dramatically. Gollum had the ring for 500 years when he lost it he should have died or faded into a wraith? Or is it because he had it for so long that he has a connection and has partially faded which is why he doesn't die just like the ring wraiths?

Gollum's life force became connected to the Ring and he would not die until the Ring was destroyed (though he was in danger of becoming a Wraith). If Gollum had survived the Ring's undoing, he might have lived for a few years longer, but I have my doubts.
As if he could look any uglier.
I believe one of the biggest differences between Gollum and Bilbo, is that Bilbo gave up the ring willingly, so released himself from the hold it had over him (mostly if not completely), where as Gollum was still completely connected to it as it was stolen from him, so he was still connected to the fate of the ring itself.
Not sure if Tolkien intended that or if that's just a happy accident.
