even though Tom Bombadil and Goldberry aren't a big part of the story I would still like to see them in the beginning of the series, and I am just curious if we should expect to see them.

Although we can't know for sure, my guess would be no, for now at least anyway!
I would agree with James. After feedback from both the LOTR and Hobbit trilogies (and the success of Game of Thrones), I would assume that the studio will try and go for the slightly darker vibe. Bombadil is far too poetic and sing song happy to fit into that vibe. And if I am being completely honest... I really hope he is not included.
Don't get me wrong, I love his character. But in the books. I do not believe he would work well in a live action adaption, at least not one that is intended to be taken seriously.
Tom is a great character, and he was a different character in the books. He could put the ring on and not be affected by it. He didn't care for power, and he's equal to all that live in his part of the forest. Not everyone likes Tom, in Tom Goes Boating. Hobbit(s) shoot three arrows in his hat :). I wish there was a movie about him and Goldberry.
